Apples - Chapter 2

Apple Crisp

3 medium-sized juicy apples
3/4 cup quick cooking oats
1/2 cup flour
3/4 cup brown sugar
1/2 cup melted butter

Oven: 350 degrees for 35 minutes.
Need: 8 inch round pan, lightly greased, medium glass bowl, small bowl.
Peel the apples, and cut in half through the stem end, then in half again.
Cut out the seeds and stem.
Cut each apple quarter in half, then half again, for 16 pieces from each apple.
Spread the apples in the pan.
In the medium size glass bowl melt the butter on very low in the microwave.
In a small bowl mix the oats, flour and sugar.
Add this to the melted butter and mix with a fork and then your fingers until crumbly.
With your fingers sprinkle the crumbly mixture over the apples.

Apple Pie

1 1/4 cups sugar
1/2 teaspoon cinnamon
3 tablespoons cornstarch
8 apples, peeled, sliced (4 pippin apples and 4 juicy apples, any variety)
lemon juice from one lemon about 1/2 cube butter
2 unbaked pie shells

Oven: 450 degrees for 20 minutes, then 350 degrees for 40 minutes.
Need: small bowl, pie pan with unbaked shell.
In the small bowl mix together the sugar, cinnamon, and cornstarch.
Put a layer of apples then a covering of sugar mixture in the pie shell.
Continue until apples and sugar are used up.
Squeeze lemon juice over pie, dot with butter.
Put the other pie shell on top of the pie.
Slit top pie shell in a decorative pattern.

Apple Crisp for 96, Great for a Family Reunion

13 lb. (2 No. 10 cans) apple slices
1 tablespoon salt
2 lb. sugar
2 teaspoons cinnamon

crumble topping (see below)
Crumble Topping Ingredients:
2 lb. all purpose flour
2 lb. brown sugar
1 lb. rolled wheat
1 1/2 teaspoons baking soda
1 1/2 teaspoons salt
1 lb. butter or margarine, cut into pieces

Oven: 350 degrees for 45 minutes.
Need: two 12 x 20 x 2" pans, bowls, electric beater.
Place apples in two pans.
Combine salt, sugar, and cinnamon in a bowl.
Add half to each pan of apples and mix in gently.

Crumble Topping:
put flour, brown sugar, wheat, baking soda and salt in mixing bowl.
Mix for 2 minutes at low speed.
Add butter or margarine, continue mixing for 10 minutes, until thoroughly combined.
Sprinkle the topping mix over the apples in each pan.
Bake. Good with whipped cream on top.

Baked Apples

I apple(s)
cinnamon and nutmeg
brown sugar

Oven: 350 degrees for about 45 minutes.
Peel stem end of apple 1/3 of theway down.
Core out the stem and seeds, don't break through the bottom.
Put apple in a glass bowl or several in a pan.
Drop 1/4 teaspoon of butter into each apple, add a little cinnamon and nutmeg.
Fill the hole with brown sugar.
Put about 1/2 inch of water in the bottom of the bowl or pan.
Bake or microwave until apple is soft.
Check occasionally to make sure there is still a little water in the bottom of the pan.
Let cool at least 20 minutes before serving (or you'll burn your tongue).
