Pie Crusts, Chapter 13

Fool Proof Pie Crust

1 whole egg
2 tablespoons water
2 cups flour
1 scant teaspoon salt
1 cup shortening

Need: small bowl, medium bowl, rolling pin, and floured breadboard, pie pan.

Beat egg and water together in the small bowl.
Place flour and salt in the medium bowl.
Cut in the shortening.
Add beaten egg mixture.
Mix lightly with fork.
Roll and shape on floured board.
Using your standard cookbook recipe, follow the directions for
the type of crust you want, pre-baked or unbaked.

Graham Cracker Crust

16-18 graham crackers
3 tablespoons sugar
1/2 cup melted butter

Need: blender, bowl, pie pan.

Put the graham crackers in the blender.
Flick blender on and off until crackers are crushed.
Put crackers in the bowl and add the sugar.
Mix.
Add the butter, mix in well.
Shape in pie pan.
Chill, or bake 8 minutes at 350 degrees.
Makes 2 crusts.

Cookie Crumb Crust

1 1/4 cup cookies
1 tablespoon sugar
1/3 cup melted butter

Need: blender, bowl, pie pan.

Put the cookies in the blender.
Flick blender on and off until cookies are crushed.
Put cookies in the bowl and add the sugar.
Mix.
Add the butter, mix in well.
Shape in pie pan.
Don't bake this crust.
